Peel, rinse and grate the potatoes with a very fine grater or chop in a blender.
In order for potato pancakes to be less liquid, it is necessary to drain all the water from the potato mass. To do this, I put it in a sieve and squeeze it.
I pour out the released water, and put the potatoes in a deep plate.
Step 2: mix the ingredients.
Add grated mozzarella cheese, finely chopped greens, grated onions, sifted flour, spices, peppers and eggs to the potatoes. Mix everything thoroughly.
Step 3: fry pancakes with mozzarella cheese.
Melt the fat in a pan and spoon the potato mass. Flatten it by forming several flat pancakes. Fry them over medium heat for a couple of minutes, until the bottom becomes golden, then turn over and continue cooking until all sides are rosy.
After frying, remove excess fat with a paper towel.
Step 4: Serve draniki with mozzarella cheese.
Serve hot mozzarella pancakes with mozzarella cheese. Especially tasty with sour cream.
