Pumpkin Spaghetti with Chicken

Step 1: bake the pumpkin.

Spaghetti pumpkin itself is small, to cook according to this recipe, choose the one that is largest.

Divide the pumpkin in half, take out the seeds and grease the pumpkin from the inside with olive oil. Salt, pepper.

Preheat the oven to 200 degrees and send the halves of the pumpkin into it. Bake 40 minutes, then cool (at the same time, you can fry the chicken and make the sauce), and then scrape the flesh of the pumpkin with a fork, separating it from the peel.

Step 2: fry the chicken.

Cut the chicken into thin and long slices. Salt, pepper and fry over medium heat for 6-8 minutes.

Put the fried chicken in a plate.

Step 3: prepare the sauce.

In the same pan in which the chicken was fried, fry the chopped onion with garlic. Fry about 1 minutes over low heat, then add the cherry tomato halves. Continue frying until the onions become clear, but do not burn it.

Add lemon juice and chicken stock, add heat and simmer 20 minutes. Add spinach and mix to soften. Salt, pepper.
When the sauce is ready, add chicken to it and remove everything from the heat.

Step 4: serve pumpkin spaghetti with chicken.

Put pumpkin spaghetti on a plate, and top with chicken and sauce and enjoy!
