For cookies:

1. Beat eggs with sugar and a pinch of salt in a lush light mass. You can whisk separately the proteins with half the sugar and the yolks with the second half of sugar, if there is no confidence in the power of the mixer.

6. Beat cream with vanilla sugar. If desired, you can add more sugar to the cream.

7. Put the cream, savoyardi cookies, soaked in coffee in layers for serving. Cookies are dipped in coffee for only 1 second. From above, you can make beautiful mounds using a pastry bag or the same bag with which we planted the dough (just wash it first) and sprinkle cocoa.
