  18. Coriander 1 tsp
  19. Sweet paprika 1 tsp
  20. Sichuan pepper 1 tsp
  21. Salt to taste
  22. Vegetable oil 3 tbsp

Step 1.

Heat the cauldron and pour 3 tbsp. vegetable oil, add cumin, sichuan pepper and fry for 15-20 seconds.

Step 2

Cut the meat into thin strips and put in a cauldron, fry over high heat for 3 minutes.

Step 3

Cut eggplant, carrots, bell peppers and potatoes into medium cubes, chop the garlic finely, chop the celery into rings, chop the tomatoes into small cubes.

Step 4

Add chopped onions and fry for 2 minutes over high heat.

Step 5

Add carrots and fry for another 2 minutes.

Step 6

Then add the potatoes to the cauldron and reduce the heat to medium, fry for 3 minutes, salt to taste.

Step 7

Add eggplant, tomatoes, beans, tomato paste and mix well. Fry over low heat, stirring constantly for 5 minutes.

Step 8

Add coriander, sweet paprika, ground black pepper and chili peppers, half the garlic and mix well.

Step 9

Add celery and sweet pepper, mix everything and fry for 2 minutes over low heat.

Step 10

Add 1 liter of water, bring to a boil and reduce heat, close the lid and simmer for 30 minutes over low heat.

Step 11

Pour 2 liters of water into the pan, add salt to taste and bring to a boil. Put the noodles and cook until cooked, as written on the package.

Step 12

Turn off the fire under the cauldron and add finely chopped cilantro and garlic.

Step 13.

Put ready noodles in a plate and pour lagman.
