The basis

  1. flour (whole grain or premium) 165 g.
  2. butter 90 g.
  3. cold water 4 tbsp
  4. salt pinch


  1. mascarpone 400 g
  2. cottage cheese 80 g
  3. sugar 100 g
  4. eggs 4 pcs.
  5. zest of one lemon (orange) to taste
  6. starch 30 g

  2. butter 1 tbsp

  • Serving 8 servings


We prepare the base, sift the flour into a bowl of chilled butter, add a pinch of salt and grind it into small crumbs. Add water and knead the dough. We distribute it in a baking dish in a thin layer, pierce it with a fork and send it to the oven for 10 minutes at 180C.

We prepare the filling, add mashed curd to the bowl with cottage cheese, mix well until smooth. Add sugar, and one at a time drive in the eggs. Add starch and lemon zest to the mass. The filling is ready.

Cook the caramel, melt the sugar in a frying pan, add the butter, mix until smooth. We spread half the filling on the base, pour half the caramel on top, spread the remaining filling on top and pour the remaining caramel.

We send to the oven for 25-30 minutes at 180C. The cheesecake is ready! Enjoy your meal!)
