Tzatziki, disputed origin

Although the origin of this sauce is disputed by the Balkan and Eastern Mediterranean countries, tzatziki is a Greek dish, used for Souvlaki and Gyros in particular. Here, it is served with oregano sticks and olive oil and the word comes from "cacik" (Turkish - sauce with finely chopped vegetables and spices).

In Cyprus, for example, the sauce is known as “ttalattouri”, and the recipe contains much less garlic, but is rich in mint. In Bulgaria and Macedonia, it is called "tartor" or "snezhanka" (Snow White) salad. On the other hand, in Iraq tzatziki is called "jajeek" and is served with Arak, an alcoholic beverage, and bread.

Tzatziki it is very easy to prepare and you will not spend much time among the pans in the kitchen. Here are the steps to prepare the sauce:

Cut the pickled cucumbers into cubes and set aside.

Peel a squash, grate it and squeeze the juice.

Place the cucumbers in a bowl and sprinkle salt over them. Leave them like this for about an hour to get the juice out of them.

Peel the garlic and mix it with the oil.

Squeeze the cucumbers between your palms and mix them with the remaining yogurt, garlic and oil and add salt and pepper to taste.

Finally, sprinkle the cumin on top.

Tzatziki it is a very consistent sauce, also called salad sauce, therefore it can be served alone as an appetizer or consumed as a dressing for a classic salad or as a sauce for steaks or fish. Good appetite!
