An elegant and delicious dish, which is perfect for any dinner party. Scallops are heated in Gruyere cheese, then topped with breadcrumbs and grilled.

  • 55g dry breadcrumbs
  • 75g butter, melted
  • 175g grated Gruyere cheese
  • 250ml mayonnaise
  • 4 tablespoons dry white wine
  • 1 tablespoon chopped fresh parsley
  • 450g sea scallops, quartered
  • 225g button mushrooms, sliced
  • 75g chopped onion

  1. In small mixing bowl, toss the breadcrumbs with 1 tablespoon of melted butter; mix thoroughly and set aside.
  2. In another small bowl, combine the cheese, mayonnaise, wine and parsley; mix thoroughly and set aside.
  3. In a frying pan over medium heat, saute scallops in 2 tablespoons of melted butter until opaque. Transfer to a plate lined with kitchen towels. Preheat grill for medium/high heat.
  4. Reheat the frying pan over medium heat and cook the mushrooms and onion in 2 tablespoons of melted butter until tender. Add cheese mixture and return the scallops to the frying pan. Cook until heated through and the cheese is melted. Spoon the mixture into individual ramekins or pour the whole mixture into a 30x20cm baking dish. Sprinkle the top with breadcrumb mixture.
  5. Grill 15cm from heat source for 2 to 4 minutes or until browned.

Okay, I've got this down now, I've made it a several times since my first review. Here are my changes...1/2 cup mayo, 1/2 cup light sour cream. I use Emmentaler swiss cheese melts very well and is cheaper than Gruyere. If I can't find button mushrooms I use regular sliced mushrooms. I add a little flour and water (before adding the scallops) to the sauce so it's not too runny. And very important...the bread crumbs. I use plain Panko (Japanese style) bread crumbs...so much better than the fine bread crumbs and I squeeze a little lemon juice into the melted butter and Panko crumbs. Let the casserole stand for a few minutes after removing from the oven to allow the sauce to thicken. Better than any restaurant!-27 Feb 2004

Took other reviewers' advice and used mostly thick cream with just a spoon or so of mayo to make up the quantity. Apart from that, followed recipe exactly and it was fabulously good. The other half practically burst into song and said it was the best Coquilles St Jacques he'd ever had. What we both loved about it was that the balance of the wine in the sauce was perfect - sometimes restaurants use so much it's overpowering. Will definitely make again. And again. Delicious! I followed the recipe the way it read the first time and modified it the next. It was unbelievably FANTASTIC this way: Bay scallops, 1/2 C. crumbled Ritz crackers and 1/3 C. Italian seasoned bread crumbs for the top, regular grated Swiss, cut the button mushrooms in 1/2 (instead of sliced ones), and cut down on the mayo slightly. Yum, yum, yum. 10 stars-14 Oct 2004

Here is an easy version of coquilles St.-Jacques, the classic French preparation of scallops in a creamy sauce, under a crust of bread crumbs and cheese. It comes from Ina Garten, the celebrated cookbook author and television star, who has been cooking it for dinner parties, she told The Times, practically since the start of her marriage to Jeffrey Garten in 1968. It makes for a beautiful entree that matches well with a green salad, flinty white wine and good conversation. It can be made the day before serving and heated through in an oven while guests gather. “A lot of dishes taste better after they sit for a while,” Garten said. With its whisper of curry powder in the rich, unctuous sauce, this is one of them.   • ½ pound white button mushrooms, sliced

  • 1 cup white wine
  • 1 pound sea scallops

  • 1 pinch cayenne pepper, or to taste
  • 2 teaspoons minced fresh tarragon
  • 1 teaspoon lemon zest
  • 4 large oven-safe scallop shells
  • ¼ cup shredded Gruyere cheese
  • 1 pinch paprika
  • 8 fresh tarragon leaves

Melt butter in a large skillet over medium heat saute shallots in the hot butter until translucent, 5 to 8 minutes. Stir mushrooms, salt, and black pepper into shallots. Turn heat to medium-high and cook, stirring often, until mushrooms are golden brown, about 10 minutes.

Pour white wine over mushroom mixture, dissolving any browned bits of food on bottom of skillet into wine bring to a simmer. Gently place scallops into wine and poach in the mushroom mixture until barely firm, about 2 minutes per side. Transfer scallops to a bowl. Strain mushroom mixture into another bowl, reserving mushrooms and cooking liquid separately. Return strained liquid to skillet, pour in any accumulated juices from scallops, and stir in cream. Bring to a boil and cook until cream sauce is reduced by about half, about 10 minutes. Stir often. Turn off heat and let mixture cool for 1 minute.

Quickly whisk egg yolk into cream sauce until combined. Transfer skillet to a work surface (such as a heatproof countertop or cutting board) and stir cayenne pepper, 2 teaspoons tarragon, and lemon zest into sauce.

Divide mushroom mixture into scallop shells, spreading mushrooms out to cover bottoms of shells place about 3 scallops onto each portion. Spoon cream sauce over scallops to coat let sauce drizzle down into mushrooms. Sprinkle lightly with Gruyere cheese and paprika or cayenne.

Turn oven's broiler to high. Slightly crinkle a large sheet of aluminum foil and place onto a baking sheet. Place filled shells onto foil and press lightly to help them stay level.

Broil about 10 inches from the heat source until sauce is bubbling and cheese is lightly browned, 5 to 6 minutes. Transfer to serving plates lined with napkins to prevent shells from tipping garnish each portion with 2 crossed tarragon leaves.

How To Pick The Best Scallops?

Easy Scalloped Potatoes

One of the things you're going to love about these potatoes is how easy they are. You start by greasing a casserole dish. Then a mandoline makes quick work of thinly slicing the Yukon gold potatoes. 01 - Mince Mushrooms and Shallots.

02 - In a large saucepan over medium heat, cook Mushrooms, half quantity of Butter and half quantity of Shallots for about 30 minutes.

03 - Mince Parsley and Tarragon and add them into the saucepan. Season with Salt and Pepper.

04 - Using a large saucepan, bring to a boil the remaining Shallots, Martini Dry Vermouth White, Bay Leaf, Salt, and less than a cup of water over medium heat.

05 - Add the Scallops and cook for about 3 minutes, or until barely tender.

06 - Divide the first pan ( directions 2 and 3 ) among 6 cleaned scallop shells or shallow gratin dishes.

07 - Remove the Scallops from the second pan and place them over the Mushrooms, in the shells or dishes.

08 - Continue boiling the mixture into the second saucepan ( direction 04 ) for about 10 minutes, or until reduced to half cup.

( in the meanwhile, heat broiler to high )

09 - Add Butter and Flour and stir until a smooth thick cream has formed ( about 10 minutes ).

10 - Add Grated Cheese, Lemon Juice, Salt and Pepper.

11 - Pour the Creamy Sauce over the Scallops and broil for a couple of minutes, or until browned on top.


Gruyere Baked Scallops recipe - Recipes

2 tablespoons butter (divided)

1 large shallot, finely chopped (about 1/2 cup)

1 teaspoon finely chopped garlic

1 1/2 pounds bay scallops, patted dry

1/8 teaspoon ground white pepper

1 tablespoon olive oil (divided)

2/3 cup dry white wine, such as sauvignon blanc or pinot gris

2 teaspoons fresh thyme, chopped, or 1/2 teaspoon dried thyme

1/3 cup shredded Swiss cheese

In a large sauté pan, melt 1 tablespoon of the butter over medium-low heat. Add the shallot and sauté until translucent, 2 minutes. Add the garlic and cook for 45 seconds transfer mixture to a small bowl and set the pan aside.

Preheat broiler and adjust oven rack so that it is 4 inches below broiling element. Season the scallops with the salt and white pepper. Toss the scallops in the flour, shake off all the excess flour and place the scallops on a clean plate.

Return the sauté pan to the stove, add half of the remaining tablespoon of butter and half of the oil, and heat over medium-high heat. When the butter has melted, add half of the scallops, and cook until lightly browned, stirring once, about 4 minutes. Repeat with the remaining butter, oil and scallops. Remove to a plate and keep warm.

Add the shallot-garlic mixture, white wine, bay leaf and thyme to the pan cover and simmer until the sauce has thickened, 2 minutes. Discard the bay leaf, pour the sauce over the scallops and gently stir to combine. Divide the scallops among four individual gratin dishes. Sprinkle the cheese over the top of the scallops, place them on a rimmed baking sheet, and broil until the cheese is browned and bubbly, 1 1/2 minutes.

This is about as close as I get to haute cuisine, mostly because I don't much care for things towered on a plate with dribbles and dabs of fancy sauce, making it look much better than it actually tastes. It's also unrealistic to expect people to cook that way at home. This dish combines elegance and sophistication with simple everyday preparation. Does it get any better than that?
Serves 6

• 2 pounds large sea scallops
• 2 tablespoons extra-virgin olive oil
• 4 tablespoons (1/2 stick) unsalted butter
• 1/2 pound cremini mushrooms, cleaned with a damp cloth and sliced
• 1/4 cup minced onion
• 1/3 cup all-purpose flour
• 1/2 cup good, dry white wine
• 1 cup heavy cream
• 1/2 cup whole milk
• Kosher salt and white pepper, to taste
• 1 cup grated Gruyere cheese
• 1 tablespoon plus 1 teaspoon freshly squeezed lemon juice
• 1 tablespoon chopped fresh flat-leaf parsley, for garnish

Wash the scallops and pat dry with a paper towel to ensure caramelization when seared. In a large skillet, heat the oil over medium-high heat to almost smoking, and sear the scallops until a golden crust forms, about 2 minutes on each side. Remove to a plate and keep warm under a loosely tented piece of foil.

Add the butter to the pan and saute the mushrooms and onions for about 5 minutes add the flour and cook, stirring, 1 minute. Whisk in the wine cook off the alcohol, about 1 minute. Whisk in the cream and the milk simmer gently until the sauce begins to thicken, about 2 minutes. Season with salt and white pepper. Add the cheese, stirring until melted. Add the lemon juice. I tried this recipe last night and it was very tasty, but something seems to be missing. With all those liquids and no thickener, it was basically soup - a great fondue or maybe a sauce to put over pasta? But it was my impression that this should be a stand-alone recipe, like a casserole, right? @Makeup Junkie - I double-checked the recipe, and nothing got left out. It is indeed a fondue-like cheese sauce that surrounds the scallops, and my family likes to eat it over white rice. Maybe you'd like it better that way?
