  1. Eggs 3 pieces
  2. Coconut milk 4 tablespoons
  3. Zucchini 1/2 small pieces
  4. Arugula handful
  5. Coconut oil for frying

Frying pan, spatula, mixer.


Step 1: chop the zucchini.

Cut zucchini into thin slices. Salt, pepper and add any other spices that you like.

Step 2: shake the eggs.

Beat eggs with salt and coconut milk until smooth.

Step 3: prepare the omelet with zucchini.

Heat oil in a pan, and when it becomes hot, pour half the egg mass. Cook over low heat.

Once the mass is barely set, put slices of zucchini into it.

And immediately pour out the remaining egg mass.

When the omelet grabs, gently pry it with a spatula and flip it to the other side. Continue cooking over low heat.
